From coffee cherry to coffee bean: the secret to a unique taste

Coffee is an indispensable drink for many people every morning. The key to making a cup of delicious coffee is to choose high-quality coffee beans and process them properly. This article will reveal the secrets behind the production from coffee fruit to delicious coffee beans.

1. Raw material selection

To make coffee beans with a unique taste and rich flavor, you first need to select high-quality raw materials - fresh, moderately mature coffee cherries without insect pests and mildew. Only by selecting high-quality, healthy, moderately mature cherries without damage or mildew can the final product taste good.

2. Peeling and removing the pulp

Once picked, even the best quality coffee cherries need to be peeled and ground. This can be done by either the washed method or the wet or dry method. The washed method involves soaking the cherries in water, then rubbing and washing them to remove the pulp and mucus. The wet or dry method involves drying the cherries in the sun, then using a machine to remove the outer skin.

3. Fermentation

After the skins and grounds have been removed, the fermentation process begins. This step is critical because it has a significant impact on the final taste. The fermentation process generally lasts 24 to 48 hours, during which time the natural enzymes inside the coffee beans come into contact with air and produce chemical reactions. This reaction helps change the chemical composition of the coffee beans and give them their special flavor.

4. Baking

After fermentation, coffee beans need to be roasted to achieve the best taste. Roasting is a precise and complex process that heats the coffee beans at high temperatures and causes them to dehydrate, swell, change color, etc. Different degrees of roasting will bring different flavor characteristics: light roasting usually has sour and floral aromas, medium roasting is more balanced, and deep roasting brings a strong bitterness and cocoa flavor.

5. Cooling and storage

Once the roasting process is complete, the coffee beans need to be cooled and stored. This step is very important because cooling stops the chemical reactions during the roasting process and keeps the coffee beans fresh. It is also crucial to seal the coffee beans after cooling in a dry, dark and oxygen-free environment.

6. Grinding and brewing

The last step is to grind the carefully prepared coffee beans and use them for brewing. Choose the coffee powder of appropriate coarseness and fineness according to different preferences and usage, and use appropriate methods (such as drip, espresso, etc.) to extract a cup of fragrant and delicious coffee.

In short, every step in the production process is crucial, from selecting high-quality raw materials to finally tasting rich, flavorful coffee. Only carefully selected, processed and roasted coffee beans can bring a unique taste and a pleasant coffee experience.
