1. Raw material selection

Only by selecting high-quality, healthy, moderately mature cherries without damage or mildew can the final product taste good.

2. Peeling and removing the pulp

Once picked, even the best quality coffee cherries need to be peeled and ground. This can be done by either the washed method or the wet or dry method. The washed method involves soaking the cherries in water, then rubbing and washing them to remove the pulp and mucus. The wet or dry method involves drying the cherries in the sun, then using a machine to remove the outer skin.

3. Fermentation

5. Cooling and storage

This step is very important because cooling stops the chemical reactions during the roasting process and keeps the coffee beans fresh. It is also crucial to seal the coffee beans after cooling in a dry, dark and oxygen-free environment.

6. Grinding and brewing

The last step is to grind the carefully prepared coffee beans and use them for brewing. Choose the coffee powder of appropriate coarseness and fineness according to different preferences and usage, and use appropriate methods (such as drip, espresso, etc.) to extract a cup of fragrant and delicious coffee.
