Washed, natural and honey processing

Processing describes what happens between harvested fruit and dried coffee.

Understand the choice

Washed processing removes fruit material before the final drying stage; natural processing dries coffee in the fruit. Honey or pulped-natural descriptions generally indicate drying with some mucilage present. Producers use these terms in different ways, so detailed lot notes are valuable.

Put it into practice

Do not turn a process name into a fixed flavour prediction. Compare two well-documented lots and record the fruit handling, fermentation information and drying description if supplied.

Keep the conversation useful

Share your actual recipe or experience, identify the coffee or equipment and explain what changed. A clear question with measurements makes the discussion easier for others to answer.
