Next, the harvest arrives at the processing plant for processing. The first step is to remove the outer skin as well as the inner pulp. This is achieved by placing the coffee beans in a tank of water for fermentation. During the fermentation process, the pulp is broken down and the flavor of the beans is improved.

The coffee beans are then washed or dried. The washed method involves soaking the beans in water to remove any remaining pulp and other impurities, while the dried method involves drying the beans in the sun or using mechanical equipment.

Baking and tasting

Once the processing is complete, the coffee beans are ready for roasting. Different roasting degrees produce different taste and flavor characteristics. From light to dark, there are: light roast, medium roast, dark roast and espresso.

When the coffee reaches the ideal roasting degree, it can be used for brewing. There are many kinds of brewing methods: drip, French press, hand pour, etc. Each method can bring out different flavor characteristics of coffee.

Tasting is an important part of the process, where coffee quality is judged by smelling, tasting and evaluating the coffee under the guidance of a coffee taster. They will note aspects such as the coffee's acidity, sweetness, bitterness and mouthfeel. Only the best beans will receive high scores.
