Hand-poured coffee is a traditional way of brewing coffee that preserves the original flavor and aroma of coffee beans. To make a cup of hand-poured coffee with a rich taste and strong aroma, you need to master the following five techniques.

1. Choose the right coffee beans

Choosing the right coffee beans is the first step to making delicious hand-brewed coffee. Coffee beans produced in different regions have different flavor characteristics. For example, the coffee beans produced in Kenya are famous for their high acidity and strong fruit acidity; the coffee beans produced in Colombia are loved for their balanced taste and soft flavor. In addition, you can also choose different processing methods such as deep roasting or light roasting according to your personal taste preferences.

2. Accurate weighing and grinding

In the hand brewing process, accurate weighing and grinding are very important steps. Use an electronic scale to accurately weigh the required amount and adjust the ratio of water to coffee according to the selected variety. When grinding coffee beans, choose the appropriate coarseness according to the brewing tool used. Generally speaking, medium coarse grinding is suitable for most hand brewing equipment.

3. Control water temperature and brewing time

Water temperature and brewing time have a huge impact on the taste of hand-brewed coffee. Generally speaking, heating water to between 90-96 degrees Celsius is the best choice. Too high or too low water temperature will result in unsatisfactory taste. In addition, waiting about 30 seconds after pouring in boiling water before starting to brew can help the coffee release its aroma better.

4. Master the correct mixing technique


During manual stirring, be careful to maintain a uniform and steady speed, and avoid violent stirring that may cause overflow or leakage. You can use a special long-handled spoon to gently rotate the bottom of the cup to ensure adequate mixing and full contact between the coffee and water.

5. Taste and adjust the taste


Tasting is an essential step in the hand brewing process. By tasting, you can understand the taste and flavor characteristics of the coffee and adjust it according to your personal preferences. If the coffee is too sour, you can try to increase the brewing time; if the coffee is too bitter, you can reduce the grinding degree or adjust the ratio of water to coffee.
