Barista teaches you how to make hand-brewed coffee

The principle of hand brewing is to put the coffee powder into a container, add a filter (filter cup or filter paper, filter cloth), then slowly moisten the coffee powder with water, and continue to add water to the appropriate concentration. The dissolved coffee liquid will drip into the cup through the filter.

Brewing tips : Achieve the ideal extracted flavor by adjusting the coffee powder grinding degree, water temperature, water flow rate, time, and powder-water ratio.

Prepare the following equipment : grinder, filter cup, filter paper, sharing pot, hand brewing pot, wooden stick (for stirring), thermometer, kettle, and electronic scale.

Steps :

1. Prepare all necessary utensils, hot water and coffee powder.

2. Fold the filter paper along the edge line and place it in the filter cup. Soak the filter paper in hot water and make it fit well on the filter cup.

3. Combine the filter cup and the sharing pot, and pour the coffee powder into the filter cup. We use a water ratio of 16:1, so the amount of coffee powder here is 20g.

4. Check the water temperature, which should be between 88-94°C. Choose the appropriate water temperature based on the coffee beans. Start pouring water into the coffee powder in a circular motion.

5. When all the water in the filter cup is dripped and filtered (the time is calculated from the beginning of steaming, within 2-3 minutes), remove the filter cup and start tasting.

First water injection (steeping): Use 3 times the amount of water in the coffee powder, which is 20g, so we inject 60g of water to soak all the coffee powder, and start timing for 20-30s. The carbon dioxide in the coffee powder is released by steaming. The fresher the coffee, the more gas will be discharged.

Second water injection: Add water in a circular motion at a constant speed until the brew reaches 260g. You can also add water several times to adjust the brewing method to the appropriate level.

Special note: When adjusting the brewing method, we often use the method of adjusting only one variable to find the appropriate brewing parameters.

Among the hand pouring methods, one of the indispensable ones is the flannel filter cloth hand pouring. Different from the above, the filter used by flannel is made of soft wool fabric with suede.

There are more water filtration holes, and the velvet surface absorbs and retains the oil in the coffee, making the coffee flavor mellow and smooth. During use, it is necessary to pay attention to the repeated cleaning of the filter cloth.
