The formation process of cat poop coffee beans

Kopi luwak, also known as civet cat poop coffee, is a rare and expensive coffee variety. It gets its name from the fact that the beans are eaten and excreted by civet cats in the Asian forests before being picked. Although it sounds a bit disgusting, it is this special process that gives Kopi luwak its special and fascinating flavor.

1. Civet cats choose the best fruit

Civets (also known as Asian forest musk) live in areas such as Indonesia, the Philippines and Vietnam. They love to eat cherries that grow locally and are very picky, choosing only the ripest, sweetest fruits to eat.

2. Chemical reactions occur during digestion

When a civet eats a cherry, the pulp it contains is broken down by its digestive system and absorbed as nutrients. However, the outer layer of the coffee bean is indigestible and is processed through a series of chemical reactions in the civet's stomach.

3. The role of enzymes

In the civet's stomach, there is a special enzyme that breaks down the protein contained in the outer layer of coffee beans and converts it into simpler, more easily absorbed substances through a fermentation process.

4. Fermentation process

When the coffee beans come into contact with the civet gastric juices, an important fermentation process occurs. This process lasts about 24 hours, during which time bacteria and microorganisms further break down the coffee beans and produce special compounds.

5. The flavor becomes richer

Due to the digestion and fermentation process, civet coffee beans contain many special and complex aroma components, which give them rich, smooth, naturally sweet and fruity characteristics.

6. Coffee bean picking and processing

Farmers collect the digested and fermented coffee beans in the forest after civets excrete them. The beans are then washed, dried and the outer pulp removed. They are then sent to roasters for further processing.

7. Roasting and grinding

In the roasting plant, the civet coffee beans are properly processed according to different taste requirements. Usually, they are lightly roasted at a lower temperature to preserve their special flavor and aroma.

8. Brewing and tasting

Finally, people can brew these carefully crafted kopi luwak beans at home or in coffee shops and enjoy their special and unforgettable taste experience.

In summary, in the formation process, "the civet cat selects the best fruit", "chemical reactions occur during digestion", "enzymes act", "fermentation process" and so on are all crucial and indispensable links. It is these special processes that give the civet coffee beans their unique flavor and taste, making it a highly sought-after rare coffee variety.
