Dark roasted and light roasted coffee beans: the contrast between mellow and fresh

Coffee is a drink that many people cannot live without every day, and the taste and mouthfeel of coffee depend on the degree of roasting of the coffee beans. Dark roasting and light roasting are two common roasting methods, which give coffee different characteristics. This article will compare dark roasting and light roasting in terms of aroma and freshness.

1. Fragrance

During the deep frying process, due to the high temperature, a large amount of oxidized substances are generated, and some organic substances undergo cracking and polymerization reactions to form a series of substances with special flavors and aromas. These aromatic substances will be released in the aqueous solution, and give the deep-processed coffee a complex and long-lasting feeling of richness, mellowness, sweetness, slight bitterness or spicyness.

On the contrary, during the light processing, there is no high temperature oxidation reaction, and the internal structure and composition of the coffee beans do not change significantly. Therefore, lightly roasted coffee beans retain more of the original flavor, and their aroma is fresher, lighter, more fragrant, and has a certain acidity.

2. Fresh

Dark roasted coffee beans usually have lower acidity and a distinct bitter taste. Under high temperature, the acidic substances in coffee are largely decomposed or volatilized, making the taste of dark roasted coffee more balanced and less irritating. At the same time, a complex chemical reaction called Maillard reaction is formed under high temperature, further enhancing the unique fragrance and sweetness of deeply processed coffee.

In contrast, during the light roasting process, due to the lower temperature, the acidic substances are retained and released in the aqueous solution. These acidic substances give the light roasted coffee a fresh, bright, fruity aroma, and a brighter and lighter taste.

Summarize

Dark roasting and light roasting are two different ways of processing coffee beans, which give coffee different characteristics. Dark roasted coffee beans have the characteristics of mellow, rich and slightly bitter, and a balanced and lasting taste; while light roasting retains the original flavor, with fresh, bright and fruity characteristics, and a brighter taste. The choice of which roasting degree depends on personal taste preference. Whether you pursue mellow and sweet or fresh and light, you can find the enjoyment that suits you in these two different coffees.
