Dark roasted coffee beans usually have lower acidity and a distinct bitter taste. Under high temperature, the acidic substances in coffee are largely decomposed or volatilized, making the taste of dark roasted coffee more balanced and less irritating. At the same time, a complex chemical reaction called Maillard reaction is formed under high temperature, further enhancing the unique fragrance and sweetness of deeply processed coffee.

In contrast, during the light roasting process, due to the lower temperature, the acidic substances are retained and released in the aqueous solution. These acidic substances give the light roasted coffee a fresh, bright, fruity aroma, and a brighter and lighter taste.
