Homemade coffee hand-poured Chemex pot to make a pot of traditional authentic American coffee

If you happen to break your Chemex (hand-brewed drip filter glass American coffee pot) and the new one is still on the way, how can you make a cup of real strong but not bitter American coffee? Maybe the American coffee from Starbucks and Dunkin Donuts downstairs can solve your worries, but after all, it is not as good as the coffee you brew yourself, and you have to spend at least $4 to enjoy the baptism of the "coffee ceremony".

American coffee: The uniqueness of the American Chemex coffee pot is that the coffee pot and the filter cup are integrated, not separated. The appearance wrapped in wood and leather rope on the slender waist is quite high-end and elegant. But the secret to extracting pure yet flavorful coffee lies elsewhere. There is an air channel in the upper part of the filter cup of the American Chemex coffee pot, which is funnel-shaped. When extracting coffee, air can be supplied smoothly, and the filter paper can be easily removed after use. In addition, the filter paper used in the American Chemex coffee pot is about twice as heavy as ordinary filter paper, but its advantage is that it can drip out strong but non-bitter coffee.

The funnel and flask of the American filter pot do not have a receiving part. Since the filter paper is placed, if the sewn filter paper is used, the weight of the coffee will cause the filter paper to break on both sides. It is as simple as putting the filter paper directly on the mug and then making coffee. However, the basket-shaped filter paper can be folded twice like the round filter paper and folded into a funnel shape to use instead. The coffee extracted with the American filter pot can not only remove excess oil and bitter ingredients, but also extract only the purest coffee. After being frozen and stored, it will not lose its flavor even if it is heated again. When the filter pot is directly placed on the gas stove to heat, it is still dangerous even if heat-resistant glass is used, so it is better to place it on an iron rack or tripod before heating.

Homemade Chemex American Coffee Maker:

Step 1:

A carafe or wine bottle, or whatever porcelain you think will hold the coffee. You'll need hot water to filter the coffee. For the filter, muslin or unbleached cotton will do, but sterilize it before use. How? Just boil it in a pot for 5 minutes.

Step 2:

For the first filter, use about two cups of hot water at 195-205 degrees Fahrenheit (90.6-96.1 degrees Celsius). If you use a paper filter, the seams can be easily folded. To fix the edge of the filter paper to the glass carafe, first use hot water to scald the filter paper, then pour out the waste water.

Step 3:

The coarseness of the coffee beans depends on the filter paper you use. Paper filters can be finer, while yarn filters need to be coarser. Grind 1 ounce (30g) at a time. Pour 0.25 cups (60mL) of hot water into the coffee for the first time, and gently stir the water to let it stay in the coffee powder for about 30 seconds. Then continue to pour hot water, just don't spill it. When 2 cups of hot water are poured, you can carefully remove the filter paper and the filter residue, and a pot of coffee is ready. This method is most useful when traveling.

Editor's comment: The American coffee experience Starbucks gave me was "bitter", and I am very interested in this strong but not bitter American coffee. This hand-poured pot is very traditional and incompatible with the style of home intelligence. This is also the traditional mood of technological life. I like the combination of this classical elegance and smart coffee machine. I use this traditional hand-poured pot during holidays and my smart coffee machine on weekdays. The Chinese meaning of Chemex is very strange: chemical exchange (isotope enrichment) process, because its inventor is a chemist. The hand-poured pot is well-known in the United States.
