Hello everyone, I am Coffee Craftsman. Let’s continue with the second article based on the previous one. If there are friends who haven’t read it, you can read my previous article!

This lecture is not about coffee techniques, but some details of making hand-brewed coffee! The above are all my own combined experience! I hope you can absorb the knowledge I transmit like a sponge!

First of all, brewing water is very important

Raw water contains many substances, which will affect the extraction flavor, so you must use soft water and make it as clean as possible.

In order to let everyone know the difference in water quality more intuitively, I used three different types of water for testing as follows

1.Tap water 2.Filtered water 3.Spring water

TDS: 174

TDS: 175

TDS: 9

These 3 types of water surprised me a little bit. The quality of tap water and filtered water is very similar. It seems that I need to change the filter.

TDS value 100-500 belongs to general purity

TDS values ​​below 50 are considered highly pure water

The higher the purity, the lower the TDS value.

Water with a low purity value is very clean, and the brewed coffee will be very mellow!

If the purity value is high, then its cleanliness is not very clean. You may taste the taste of iron when boiling it, and the brewed coffee will definitely not taste good. The importance of water quality is also very important when making tea!

If you don’t believe it, you can try it yourself and compare it. Use the one that suits you better!

When brewing, we must pay attention to the height of the water injection, not too high, not too low! Just ensure that the water is injected evenly and at the same height. Why should we pay attention to this? Let's look at the picture below:

You can see that the powder layer beside has collapsed. The reason for this is that I injected water into the edge of the coffee powder, which caused the surrounding layers to be destroyed by water, which would lead to leakage! At the same time, high-position brewing will cause water to be injected into the coffee powder to form a backwash phenomenon, and you will see the coffee powder rolling! Secondary extraction is formed! The extraction rate is increased, which means that the sour taste is particularly heavy and it is particularly difficult to drink! This is one of the reasons why coffee made without paying attention to details is unpalatable!

I believe that after reading these two articles, you will have a certain knowledge of coffee brewing techniques and details! 1. Ensure the purity of water (pure water)

There may be more than seven key points. I will tell you all the details that I know. Some people may say warm the spout of the teapot, warm this and that. I believe everyone knows it as long as they have a little experience in drinking tea. I will not repeat these trivial details!
