Drying and sortingAfter washing, the coffee beans need to be dried to restore their proper moisture content. Usually, a few days of drying in the sun will achieve the ideal condition. Over time, the coffee beans are screened, sorted and graded throughout the process. This is to ensure that only the best quality beans make it to the next stage in order to create a great tasting coffee. BakingAfter a long and delicate process, the coffee beans are finally ready for roasting. At this stage, farmers place the beans in special roasting machines that heat them at high temperatures. As the temperature rises, the water inside the coffee beans begins to evaporate and chemical reactions occur. These reactions cause changes in color, aroma and taste.
