Farmers patiently wait for the ripe red berries on the trees to appear and pick them by hand. This process requires careful operation to avoid damaging or mixing in unripe fruits.

Processing and peeling

Once the picking is complete, the next stage is processing. There are two main processing methods: dry and wet. Dry processing involves drying the coffee berries in the sun until the skin dries and falls off. Wet processing involves peeling the berries first, then fermenting and washing them. Regardless of the method used, the goal is to remove the outer pulp and retain the inner coffee beans.

Fermentation and washing

For wet processed coffee beans, the next step is fermentation. This process helps remove the mucilage from the beans and brings a special flavor to the final taste. The fermentation time usually ranges from 12 to 48 hours, depending on the desired flavor.

For dry-processed coffee beans, they need to go through a water washing step to remove surface impurities and incompletely ripe beans. This step is very important because it ensures that high-quality, pure coffee is finally produced.

Baking and blending

Once the processing stage is over, the next step is roasting. Roasting can change the color, taste and flavor of coffee beans. The roasting temperature and time are key factors, too high or too low will affect the quality of the coffee.

After roasting, the coffee beans need to be cooled and left to rest for a period of time to release carbon dioxide. Then, the roaster will blend coffee beans from different origins and types according to demand to create coffee with a specific flavor and taste.

Grinding and Brewing

The final step is to grind the coffee beans into a powder and brew it with water. The fineness of the powder is important to extract the desired flavor. A finer powder is suitable for concentrated coffee (such as espresso), while a coarser powder is suitable for brewing methods such as drip or French press.

Regardless of the method used, the correct water temperature, extraction time and ratio are key factors in making a good cup of coffee. These factors can affect aspects such as acidity, bitterness and sweetness.
