From coffee cherry to coffee bean: the complete production process

Coffee is a popular drink, and coffee beans are the key raw material for making coffee. From coffee fruit to fragrant coffee beans, it goes through a delicate production process. Let's reveal the secrets of this process.


First, let's look at the stages from picking to peeling and fermentation. When the coffee cherries are ripe, farmers pick them by hand and sort them into red and yellow categories. Then, after cleaning, farmers dry them in the sun or use machines to dry them. Next, in the peeling stage, farmers use machines or hands to peel off the outer pulp, leaving the seeds inside, which are called "beans."

Next comes the fermentation and roasting stages. During the fermentation process, the beans are placed in special containers for days or even weeks to remove residual substances and increase flavor complexity. Over time, microbial activity under the right temperature and humidity conditions helps change the internal structure of the beans and produce specific flavor compounds.


The last stage is the roasting. In this stage, the beans are placed in a roaster and heated at high temperatures. As the temperature rises, the beans begin to change color and gradually turn into a brown color with a strong coffee aroma. Different degrees of roasting will produce coffee beans with different flavors and tastes. Light roasting will retain more of the original flavor, while dark roasting will bring a richer and more bitter taste.
