Coffee beans roasting degree: light roast, medium roast, dark roast, do you know?

The degree of roasting of coffee beans is one of the important factors affecting the taste and flavor of coffee. According to the degree of roasting, coffee beans can be divided into three types: light roasting, medium roasting and dark roasting.

Light roasting means roasting coffee beans at a relatively low temperature for a short time, usually for about 8-10 minutes. This roasting method retains the original sourness and floral aroma of the coffee beans, making the taste refreshing and bright. The lightly roasted coffee beans are lighter in color and may still have some oil on the surface.

Medium roast is a level between light roast and dark roast. It is roasted at a medium temperature for about 12-14 minutes. This can balance the sourness and bitterness and make the flavor richer and more complex. Medium color and a little oil on the surface are also unique to the medium roast level.

Dark roasting is a relatively long (15-20 minutes) roasting process at the highest temperature. This will fully roast the sugar inside the coffee beans, producing a strong bitter taste and burnt aroma. Dark roasted coffee beans are darker in color and have a layer of obvious oil on the surface.

Different roasting degrees bring different taste and flavor characteristics. Light roasted coffee usually has a bright and refreshing acidity, floral aroma and light taste; medium roasted coffee is more balanced, while retaining some fruit acidity and sweetness; while dark roasted coffee emphasizes bitterness, heavy taste and rich and complex flavor.


When choosing coffee, we can choose the roasting degree that suits our taste according to personal preference. If you like fresh and bright coffee with floral aroma and don't like bitter taste, light roasting may be a good choice. If you want to try a more balanced and complex flavor, medium roasting level is worth considering. For those who pursue strong bitterness and rich flavor experience, dark roasting is the best choice.
