These ripe berries are called "coffee cherries" and contain two seeds (the so-called "beans"). Next, the cherries go through the processing steps of peeling, fermentation, and washing. Peeling can be done by machine or by hand, during which the outer pulp is peeled off. Then, during fermentation, the pulp that remains on the seeds naturally breaks down and produces special flavor compounds. Finally, in the washing stage, clean water is used to rinse the seeds clean and remove any remaining materials.

Next comes the roasting stage. During this stage, the processed and cleaned beans are placed in a roaster and heated. The roasting time and temperature can be adjusted according to the desired taste and type of coffee. During this process, the beans undergo chemical reactions that produce rich aromas and flavors. Generally speaking, lighter roasts retain more of the original coffee bean's characteristics, while darker roasts make it fuller and more bitter.

Finally, the brewing stage. In this stage, the roasted coffee beans need to be finely ground and contacted with water to extract the coffee solution. The most common brewing methods include drip, espresso, French press, etc. Each method has different requirements for water temperature, powder fineness, and extraction time, and can bring different taste and flavor characteristics.

In summary, the coffee making process, from picking to processing to brewing, is divided into three main stages: picking and processing, roasting, and brewing. Each step has an important impact on the flavor and taste of the final coffee. Understanding these processes can help us better appreciate and taste coffee.
