The difference between ripe and green coffee beans: at a glance

Coffee beans are an important raw material for making coffee, and their maturity has an important influence on the flavor and taste of coffee. There are obvious differences between green beans and mature beans. The following will introduce these differences in terms of appearance, color and taste.

First of all, there is a clear difference between green beans and mature beans in appearance. Green beans are usually small and irregular in shape, with a smooth surface and no shine. Mature beans are relatively large and more uniform and full in shape. In addition, the difference between them can also be felt when touching: green beans feel dry and rough, while mature beans are relatively smooth and soft.


Secondly, the color can clearly distinguish the two. Green beans are generally light yellow or light green, and the color is not very uniform; while mature beans are dark brown or dark black, and the overall color is relatively uniform. This is because as the coffee fruit gradually becomes more and more mature, the pigment inside the bean will gradually transform, making the color darker.

Finally, taste is one of the important indicators for judging the maturity of coffee beans. Green beans usually have higher acidity and bitterness, and a relatively light taste. Mature beans have lower acidity and bitterness, and a richer and rounder taste. This is because as the coffee fruit gradually matures, the pectin, protein and other substances contained in it will decompose and transform, thus changing the flavor characteristics of the coffee beans themselves.
