Don’t be fooled again, here’s the inside story: coffee powder cannot be brewed repeatedly!

Here's what happened. In our coffee lover group, a new member asked a question: Why can't coffee powder be brewed like tea bags? So today's topic is: Why can't coffee powder be brewed repeatedly?

Everyone knows that ground coffee beans cannot be brewed a second time, but have you ever thought about why?

Organization

The main reason coffee beans cannot be brewed repeatedly is due to their composition.

Roasted coffee beans are composed of soluble aromatic substances (about 30%) and wood fibers (about 70%), but when extracting aromatic substances, not all of them can produce the best coffee. Generally speaking, the extraction rate of 18% to 22% is the range recognized by the industry. The soluble aromatic substances in coffee are attached to the cell walls of the roasted beans. After contact with water, they are dissolved and washed out with water, which is what we call coffee extraction.

The deeper the coffee beans are roasted, the looser the internal structure is, and the easier it is for the substances inside to be decomposed. When water is continuously poured into the coffee powder, the aromatic substances are released. When about 22% of the aromatic substances are taken out, if water is continued to be poured, the liquid that flows out will have a mixed taste. Depending on the dissolution rate, the first thing released is acidic substances and floral and fruity aromas, followed by sugar and caramel flavors, and finally bitterness and other impurities.

This is a bit abstract, let's take a simple example, it's like making soy milk. A bag of soybeans, soaked, crushed, filtered, and then the remaining dregs, no matter how you brew it, it's bland. Of course, we can argue, for example, if I drink soy milk and cook the dregs together, then I can only admit defeat.

Each food has its own characteristics. The more tea is brewed, the more mellow it becomes. After coffee beans are ground, they only need to be brewed once. Brewing again will only reduce the taste of the coffee, which is not worth the loss. Coffee and tea are very different, but they have the same charm that makes people love them. I think this is the gift of nature to mankind!
