1. The temperature of making milk coffee

The water temperature for extracting espresso is: 92°C-93°C

But Italian espresso only has 30-60ml, and after extraction, you need to make milk foam and inject 300ml of milk, so the temperature of the milk is more important.

The temperature for making milk foam is generally about 55°C-65°C. The steam pump should stop when it is inserted into the milk and the foaming temperature reaches this temperature. Milk in this temperature range has the highest sweetness. If it exceeds this temperature, the protein in the milk will be destroyed, the sweetness will be reduced, and it will not be possible to make good latte art.

A cup of latte that is perfectly made is one that is ready to drink directly after it is made. At this point, after the milk foam is poured in and left to dry, the temperature is around 50°C-55°C.

2. Is it best to drink it directly at this time?

As we all know, we can taste a variety of flavors because of the taste buds on our tongue. A normal adult has about 10,000 taste buds, most of which are distributed on the back of the tongue, especially the tip and sides of the tongue. There are also a small number of taste buds on the ventral side of the tongue, as well as in the palate and pharynx of the mouth.

When people eat, the taste buds are stimulated by different flavor substances through chewing and stirring by the tongue and saliva. The information is transmitted by the taste nerves to the taste center of the brain, thus producing taste.

However, coffee that is too hot will stimulate your taste buds and make you ignore some of the flavors. Of course, if the temperature is too high, over 60°C or even 70°C, it may burn your mouth.

3. Different flavors, different times

If you want your coffee to be bitter but not sour, then it is recommended that you drink it at a relatively high temperature. Researchers at the University of Texas in the United States gathered 300 volunteers to test "What is the most suitable drinking temperature?" The final conclusion was 136°F (58°C). This is a relatively hot temperature~

Of course, if you prefer a sour, juicy taste in your coffee, lowering the temperature to 50°C-55°C can make the coffee show a richer flavor layer, and beans such as Yirgacheffe will show more of their flavor at this time.

If the temperature is lowered further, you will get the most complete flavor of the coffee, provided that your coffee is strong enough and can show bright and pleasant fruit acidity even at low temperatures. Otherwise, most ordinary coffees will become too complex in taste, with too clear acidity and bitterness, making them unpalatable. Only good coffee can withstand the test of room temperature.
