Three ways to process coffee beans: sun-cured, washed and honey-cured!

Coffee is one of the most popular beverages in the world, and the way coffee beans are processed has an important impact on the taste and flavor of coffee. There are currently three common processing methods: sun-cured, washed, and honey-cured.

Sun drying is the most traditional and simplest method of processing. In this process, freshly picked coffee cherries are placed in the sun to dry. Farmers spread cherries of similar maturity on a flat surface and turn them regularly to ensure even drying. This method is usually used to produce coffee with a strong taste and natural fruity aroma.

Compared with sun-cured coffee, washed coffee is more complicated. First, the picked coffee cherries are washed in a tank to remove the outer pulp and expose the beans. Then the beans are placed in a fermentation tank and fermented for a specific period of time to remove residual substances and enhance the flavor characteristics. Finally, the beans are washed again and dried. This treatment method produces a refreshing coffee with higher acidity.


Honey processing is a processing method between sun-cured and washed coffee. In this process, the outer layer of the coffee fruit is peeled off, and the sticky substance inside is retained. These substances will come into contact with the beans during the fermentation process, giving the coffee a unique sweetness and complex flavor. Honey-cured coffee usually has a strong taste, sweet aroma and rich taste layers.

In short, different processing methods give coffee beans different characteristics and flavors. Sun-curing produces coffee with a strong natural fruit aroma and a full taste; washing brings a refreshing, high-acidity tasting experience; and honey-curing gives a sweet, complex, and rich flavor. Choosing a processing method that suits your taste preferences or different occasions will make you taste more diverse and enjoy every cup of delicious coffee.
