First, let's look at the traditional medium roast. This method aims to preserve the original flavor of the coffee beans and roasts them at a medium degree. This allows some chemical changes to occur within the beans while keeping the moisture content high. The result is a cup with a balanced taste, moderate acidity, and a slight chocolate or nutty aroma.


Secondly, deep roasting is also widely used to make a strong and powerful coffee. In this process, the beans are heated for a longer time and at a higher temperature. This causes the internal fatty acids and carbohydrates to react and produce a dark oil surface coating. After deep roasting, the coffee is darker in color, more bitter, and less acidic. Although deep roasting will mask the original flavor, it also brings a rich caramel and chocolate taste to the coffee.

Finally, there is a relatively new roasting technique known as light roasting or "third wave" roasting. This method emphasizes single origin, specific varieties, and fine processing. Light roasts are usually performed at medium to light color and are designed to highlight the flavor characteristics of the bean itself. The result is a clear and bright cup with high acidity and rich floral and fruity aromas.
