First of all, in terms of appearance, mature coffee beans are oval or slightly flat. Usually, they have two relatively smooth and parallel surfaces. These surfaces are called "back" and "belly", the back is usually flat and the belly is slightly convex. In addition, in terms of color, mature coffee beans are dark brown or black and shiny.


Secondly, in terms of internal structure, each coffee bean consists of two main components: the kernel and the shell. The kernel is composed of two leaves that fit tightly together. These leaves are called "seed coat" and "shell". The seed coat is located in the innermost layer of the kernel and has a harder texture; while the shell is located outside the seed coat and covers the entire kernel. The shell is relatively soft and can be easily peeled off.
