The degree of roasting of coffee has an important influence on the taste and flavor. Generally speaking, the degree of roasting of coffee beans can be divided into two types: medium-dark roasting and dark roasting. Different roasting degrees will bring different characteristics and flavors.


Medium-dark roasting means that the coffee beans are processed at a higher temperature, but they do not reach a completely shiny or black appearance. This roasting method retains some of the acidity of the original coffee beans and makes them have a higher fullness and rich taste. The coffee after medium-dark roasting usually has a soft and balanced flavor, while also retaining the unique aroma of the original origin.


In contrast, dark roasting is the process of processing coffee beans at a higher temperature until the surface appears shiny or black. This will cause the acidic substances originally present in the coffee beans to be completely converted into bitter substances, and make the overall flavor more intense, bitter, and with clearly recognizable caramel and chocolate flavors. Dark roasted coffee beans are usually suitable for making strong Italian coffee, such as espresso, latte, etc.

In general, medium-dark roasting and dark roasting have different effects on coffee. Medium-dark roasting retains some of the original flavor and has a higher sense of fullness; while dark roasting emphasizes bitterness and rich taste, suitable for people who like strong flavors. Choosing medium-dark or dark roasting depends on personal taste preferences and preferences for factors such as acidity and bitterness.

It should be noted that no matter which roasting degree you choose, freshness is a very important factor. The higher the freshness, the more obvious the aroma and flavor of the coffee beans will be.
