From coffee fruit to coffee beans, this process is full of wonder and magic. It all starts with the tiny fruits of coffee trees growing in tropical regions - coffee cherries. Next comes the most critical and interesting part of the processing process - shelling and fermentation. First, farmers use special tools to peel off the outer skin to reveal the sticky substance inside, which is called "sticky meat". Then, fermentation is carried out in large containers. The fermentation process lasts from a few days to a few weeks, during which time the "sticky flesh" gradually decays and breaks down. This stage is very important because it is through fermentation that the originally bitter and tasteless coffee cherry, which is not edible directly, becomes aromatic. Next, the coffee beans need to be washed or dried. In the washing process, the coffee beans are placed in large containers and soaked, and the remaining pulp and other impurities are washed away by water. The drying process is to dry the coffee beans in the sun until they are completely dry. The final step is to remove the outer film - the "silverskin". This process is usually done mechanically, after which we finally get a complete coffee bean. However, this is not the end. In order to achieve the best taste and flavor of coffee, the coffee beans need to be roasted. The roasting process at high temperature will turn the originally green coffee beans into brown and release an intoxicating aroma. From picking to fermentation, shelling, washing, membrane removal to the final roasting process, each link is an indispensable part of transforming the tasteless and bitter raw materials into a delicious and tasty drink.
