In addition, ultraviolet rays can accelerate oxidation reactions, causing coffee beans to lose freshness over long periods of exposure.

Secondly, another reason has been discovered in the research field: light conditions can cause pigment formation reactions (Maillard reactions). When untreated green coffee is exposed to sunlight, the pigment compounds contained in it interact with other components and form compounds with different colors, odors and flavor characteristics. These reactions may cause the flavor of coffee beans to become complex, but may also produce some unpleasant odors and tastes.
