Compared with coffee brewed automatically by machines, hand-poured coffee pays more attention to details and personalized adjustments, which can bring you a purer and more unique taste experience. This article will introduce you to how to easily get started with hand-poured coffee from scratch.

Preparing tools


First, prepare the necessary tools. The following are the tools commonly used to make hand-brewed coffee:

  • Bean grinder: It is very important to choose a high-quality bean grinder with adjustable grind size. Different types of coffee beans require different coarseness to extract the best flavor.
  • Kettle: Choose a kettle with moderate capacity and easy control of water flow rate and temperature changes.
  • Electronic scale: used to measure the ratio of powder and water.
  • Hand brewing equipment: You can choose different types of hand brewing equipment such as V60, Ningshi pot, etc., according to your personal preferences and taste requirements.
  • Filter Paper: Using high-quality filter paper can filter out coffee grounds and provide a cleaner taste.

Buy coffee beans

Before making hand-brewed coffee, you must first choose coffee beans that suit your taste. Coffee beans from different origins and roasting degrees will bring completely different flavor experiences. It is recommended to choose coffee beans that are fresher, roasted more recently, and well packaged.

Grinding and Proportioning

Put the purchased coffee beans into the grinder for grinding. For hand brewing, medium-coarse to medium-fine is generally used. The size of the powder directly affects the contact area between water and coffee and the extraction speed, so it needs to be adjusted according to personal preference and the equipment used.

The ratio is one of the keys to achieving the ideal taste. Usually, 15 grams of coffee powder is mixed with 250 ml of water. This ratio can be fine-tuned according to personal taste.

Preheating equipment and filter paper

Before brewing, preheat the hand brewing device with hot water. This can prevent sudden changes in temperature from affecting coffee extraction.

At the same time, put filter paper on the hand brewer and moisten it with hot water to remove the taste of the filter paper itself and make it fit the wall of the device.


Brewing steps

1. Pour in an appropriate amount of boiling water to moisten the coffee grounds bed, then wait 20-30 seconds for the coffee to expand and release carbon dioxide.

2. Slowly and evenly pour the remaining boiling water until it reaches about one-third of the capacity, and wait for 15-20 seconds for soaking. This process is called "primary soaking" and helps release more flavor substances.

3. Slowly and evenly pour the remaining water again until the cup is about two-thirds full and keep soaking for about 30 seconds. This process is called "secondary soaking" and helps extract more coffee flavor.

4. Finally, slowly and evenly pour the remaining boiling water until the cup is about 7/8 of the capacity. Wait until the water drops have completely flowed out, and the brewing process is complete.

Taste and adjust

After pouring the hand-brewed coffee into the cup, you can gently stir it with a spoon to mix it evenly. Then smell the aroma of the coffee with your nose and taste the flavor with your tongue.

If you feel the taste is too light or too strong, you can change it by adjusting the grinding degree, the amount of powder and the brewing time. Constant trial and adjustment is the key to exploring the best taste.
