Natural drying is a simple and ancient processing method widely used in coffee production. This process does not require additional equipment, just drying the coffee cherries in the sun.

First, the ripe coffee cherries are collected and placed in a suitable place to dry. During this process, the skin will gradually dry and fall off, exposing the coffee beans inside.

Then, after a period of drying, the beans can be collected and graded. Natural drying methods usually take longer to complete and can be affected by weather conditions and environmental factors.

3. Honey Processing

Honey processing is a processing method between the washing method and the natural drying method. This method is mainly used for high-quality coffee beans produced from some special varieties or specific origins.

First, before removing the skin, coffee cherries that are more mature but not fully ripe or have not undergone the fermentation process will have some of the outer pulp removed mechanically, leaving the inner germ covered with a layer of sticky substance (called honey).

The coffee beans with honey are then dried. During the drying process, the beans absorb the sweetness and aroma of the honey, giving the coffee its unique taste.


4. Semi-water washing method

Semi-washed processing is a treatment method between washed processing and natural drying. This method is mainly used in some places where full wet processing is not possible or weather conditions are not suitable for natural drying.

First, coffee cherries that are more mature but not fully ripe or have not undergone the fermentation process will have some of the outer pulp removed mechanically, while the remaining pulp remains with the germ.


Next, the coffee beans with some pulp and germ will be soaked in water for cleaning. After cleaning, they will be placed in a suitable environment for drying.
