Preparation

First, prepare the necessary materials and utensils. You will need a hand pour-over kettle, filter paper, coffee grinder, electronic scale, kettle and fresh boiled water. Make sure all utensils are clean and rinse thoroughly with clean water.

Next, choose coffee beans that suit your taste and grind them to medium coarseness using a grinder. Remember to measure out the appropriate amount of coffee powder before use.

Pre-soak

Before you start brewing, pre-soaking is a very important step. Place the filter paper in the filter above the hand-pour kettle and wet the filter paper with boiling water to remove any residual substances or odors.

Then, add the appropriate amount of coffee powder to the wet filter paper and evenly distribute it on the filter paper. Gently shake the hand brewing pot to make the coffee powder flat, and use an electronic scale to weigh out the appropriate amount of boiling water.

Brewing process

Now, we can start the actual brewing process. First, pour a small amount of boiling water over the filter paper to allow the coffee powder to expand and release its aroma. This step is called "blooming" and usually takes about 30 seconds.

Next, slowly pour in the remaining boiling water, in a circular or spiral motion, from the center outward. Maintain a steady and even pace, and avoid pouring the water right over the rim of the pot.

A good sign is to observe the coffee bed rising and creating swirls as it interacts with the water. If you notice any uneven wetting or clogging, use a stirring stick to gently stir to promote better steeping.

In addition to the above basic steps, there are some details that need to be paid attention to in the process of making hand-brewed coffee.

Firstly, it is very important to control the water temperature. The boiling water should be between 90°C and 96°C to ensure that the coffee grounds fully extract their aroma and flavour.

Secondly, the brewing time also needs to be mastered. Normally, the entire hand-brewed coffee process should be completed within 3 to 4 minutes. If the time is too short, the coffee may taste weak; if the time is too long, the coffee may become bitter.
