Medium-dark roasting will produce more carbonized substances inside the coffee beans, so the taste is richer, bitter, and the acidity is relatively low. The coffee made at this level is suitable for making espresso.

Dark Roast

Dark roasting is also known as Spanish or Italian pot roast (Italian RoaST). At this level, the oil on the surface of the coffee beans is fully released and forms a distinct black color. Due to long-term exposure to high temperatures and the accumulation of carbonized substances, dark roasted coffee has a very strong and bitter taste, and the acidity almost completely disappears. Coffee made at this level is suitable for making rich and strong Italian coffee.

When choosing the right roast for your taste, first consider your preference for the balance between acidity and bitterness. If you like bright, light coffee with floral and fruity aromas, then light roasting is a good choice.
