Coffee brewed with soft or hard water will have less bitterness than distilled water. Using hard water, which is rich in minerals, cannot bind well to the dissolved particles in the coffee, resulting in insufficient coffee extraction. On the other hand, distilled water can easily lead to over-extraction if there is more binding space. Therefore, hand-brewed coffee requires clean and odorless water.

Under the high-quality water quality requirements, what temperature of water should be used to brew a delicious cup of coffee?

How high is the water temperature? How low is the water temperature? What is the most suitable temperature?

Generally speaking, the higher the roasting degree, the lower the water temperature; the lower the roasting degree, the higher the water temperature can be. It is recommended to use 88℃~90℃ water for medium-deep roasted coffee, and 90℃~92℃ water for medium-light roasted coffee.

In addition, for the same type of coffee beans, the higher the water temperature, the richer the brewed coffee will be and the stronger the bitter taste; the lower the water temperature, the stronger the sour taste.

If you like to drink mellow coffee, you can adjust the water temperature higher, such as 92℃ water; if you like coffee with fruit acid, you can lower the temperature appropriately, such as 88℃.

When hand-brewed coffee, you should avoid using freshly boiled water. Generally speaking, the most suitable water temperature is around 88 to 92 degrees. Of course, this cannot be generalized. For example, there will be a temperature difference between winter and summer.
