You took a look at the menu, and besides the lattes and cappuccinos that were everywhere, there seemed to be something else next to it... " hand-brewed coffee "?

You look closely and see all kinds of weird-looking equipment on the bar. Another barista who is prettier than your girlfriend is pouring water into a container that looks like a beaker in front of you with a kettle with a particularly long mouth...

Take another look at the menu: Ethiopian Yirgacheffe, Kenyan AA grade sun-dried coffee, Panama fine estate washed coffee, Guatemalan small batch coffee… Then, you feel the contempt of the barista and the sharp eyes of the students in the queue behind you. Finally, you finally decide…

Congratulations, the door to the new world of coffee is open to you. Throw away the instant coffee in your drawer and start brewing! Now I will teach you how to make a delicious cup of hand-brewed coffee.

1. Choose high-quality single-origin coffee beans

If you want to drink good single-origin coffee, the most important thing is of course to have high-quality coffee beans. Choose fresh coffee beans. When buying, pay attention to whether the color of the beans and the size of the particles are consistent. Good coffee beans have a bright and shiny appearance, and have a rich aroma without any odor. No matter which kind of coffee beans, freshness is an important factor affecting the quality. When buying, grab one or two coffee beans and chew them in your mouth. It should be crisp (indicating that the coffee is not damp) and the fragrance should linger on your teeth and cheeks. However, it is better to pinch it with your hands to feel whether it is solid, rather than buying coffee with a crisp shell.

If the coffee beans have lost their aroma or smell stale, it means that the coffee beans are no longer fresh and are not suitable for purchase.

2. Tool Preparation

A set of hand brewing equipment includes a filter cup, filter paper, sharing cup, and hand brewing pot. The grinder can be a hand grinder or an electric grinder. In order to ensure accurate control of the brewing process, you can also prepare a kitchen electronic scale and a thermometer.

3. Water for coffee

It is better to use purified water to brew coffee, because the coffee brewed with purified water tastes cleaner than that brewed with ordinary hard water. The water temperature for Italian coffee is between 89 and 95 degrees Celsius, and the water temperature for hand-brewed coffee is between 82 and 85 degrees Celsius. The above two are suitable temperatures, not absolute. Other methods generally heat directly to boiling, such as moka pots and siphons.

4. Hand-brewed coffee

1. Warming pot

Fold the filter paper and place it in the center of the filter cup, then place the filter cup on the sharing pot, add hot water to the hand-pour pot, and use the hand-pour pot to moisten the filter paper. This process has two functions: 1. Moisten the filter paper so that it fits tightly against the wall of the filter cup. 2. The hot water penetrates the filter paper and enters the sharing pot, which warms the pot.

2. Grinding beans

Weigh the coffee beans, usually about 10g for a single serving. You can adjust the coarseness of the grinder by hand or electric. The coffee beans should not be ground too finely, usually like white sugar particles.

3. Add water step by step for brewing

Spread the ground coffee powder in the filter cup, and then use the hand-made pot to add water with an even and stable water flow. The first water injection is just enough to soak the coffee powder. At this time, simmer for about 30 seconds, and start the second water injection. Start injecting water from the midpoint, and then draw concentric circles in one direction to the periphery, but do not flush it onto the filter paper. Draw concentric circles until the center and repeat this process. Keep the water flow stable. After injecting 60% of the remaining water, you can pause for a while, and then start the third water injection. The third water injection is enough to reach the required amount. Pour the coffee in the sharing pot into the warm coffee cup, and you can enjoy a cup of warm and delicious coffee.

Note:

About water temperature: It is best to use a thermometer to measure the water temperature to make it accurate. The water temperature range for hand brewing is relatively large, ranging from 83 to 95. However, the taste of different water temperatures will definitely be very different. Different beans and different roasting degrees require different water temperatures. You need to adjust it yourself to find the water temperature that suits you best.

About the coffee powder to water ratio: The coffee powder to water ratio is the weight ratio of coffee powder to water. Generally, it is acceptable to have a ratio between 1:13 and 1:20. Different coffee beans have different coffee powder to water ratios. Of course, it is mainly based on personal preference.
