Difficult way to make hand brewed coffee | 1 hand brew 2 pots, you can do it too!

The coffee brewing masters we are familiar with, such as Wang Ce, the champion of the 2017 World Coffee Brewing Competition, brew three pots of coffee at the same time with both hands. This is very difficult and requires constant practice to control the overall water injection volume and brewing time.

There is also the newcomer to the World Coffee Brewing Competition, Du Jianing, who brews two pots with both hands, and then brews the next set after finishing these two pots. This also requires very high water injection rate and time management.

While we envy and worship these masters, we also want to improve the stability of hand-brewed coffee production. So today I will introduce a relatively easy way to get started: brew two pots at the same time with one hand (I will share how to brew two pots with two hands later). After trying it a few times, the stability is very high. In a word, make a good brewing plan and brew two pots with one hand. It is actually very simple ! The following is a detailed introduction.

1. Coffee equipment selection

①A large-capacity electric kettle (such as 1L, 600ml is a bit too big to hold, and it would be embarrassing if it is not full at the end of the filling)

②2 sets of the same model of filter cups and filter papers (so that the coffee drips at the same speed, which is convenient for time control)

③2 coffee scales of the same model (same accuracy, same time buttons, so you don’t get flustered)

2. Develop a brewing plan

It includes brewing water temperature, powder-to-water ratio (amount of powder used, amount of water used), brewing time, water filling method/water cut-off method. The key here is the amount of water filled each time. After many tests, it was found that by injecting 60g of water every 10 to 12 seconds to brew two pots at the same time, when one pot is filled, it is just time to fill the other pot again. Therefore, it is recommended that when formulating the powder-to-water ratio, the water amount can be set at 180g/240g/300g , corresponding to 3/4/5 water injections respectively, so that you can use a hand-brewed kettle to brew two pots of coffee at the same time very stably.

3. Detailed explanation of the hand pouring process

Let’s use a practical example to go through the process of “1 hand brew 2 pots” hand brewing coffee.

【Brewing plan】

Powder to water ratio :

1:15 (16g coffee powder, 240g water)

Brewing water temperature : 85 degrees

Brewing time : 2 minutes to complete extraction

Water injection method :

Add water in 4 times, 10-12 seconds each time, 60g of water

Brewing process

①Preliminary preparation: boil water, weigh beans (two portions), wash filter paper, grind beans, and put powder into the filter cup

② Start pouring the first pot of water: Press the timing button on the first coffee scale to start pouring water. Add 60g of water in 10-12 seconds (the coffee scale displays 60g)

③ Start pouring water into the second pot: Press the timing button on the second coffee scale to start pouring water. Add 60g of water in 10-12s (the coffee scale displays 60g)

④ The second time to pour water into the first pot: 60g of water in 10-12 seconds (the coffee scale shows 120g)

⑤ Second pot of water filling: 60g of water filling in 10-12 seconds (the coffee scale shows 120g)

⑥ The third time to pour water into the first pot: 10-12 seconds to pour 60g of water (the coffee scale shows 180g)

⑦ The third time to pour water into the first pot: 60g of water in 10-12 seconds (the coffee scale shows 180g)

⑧ The fourth filling of the first pot: 60g of water is added in 10-12s, and the filling is completed (the coffee scale shows 240g)

⑨ The second filling of the first pot: 60g of water in 10-12s, the filling is complete (the coffee scale shows 240g)

⑩ When the 2-minute timer for the first coffee is up, remove the filter cup; when the 2-minute timer for the second coffee is up, remove the filter cup; brewing is complete!

When the coffee liquid is poured into a cup, the error between the two cups is 0.5g. If you use a coffee concentration meter to test the concentrations of both, the displayed numbers will be basically the same.
