Coffee Bean Picking: Pattern and Timing

Coffee Bean Picking: Pattern and Timing

Picking coffee beans is a crucial step in the coffee production process. The correct picking method and timing can ensure the quality and taste of coffee beans. This article will discuss the importance of picking coffee beans from two aspects: shape and timing.

Form: maturity and color

Maturity is one of the key factors that determine the quality of coffee beans. In different regions, different types of coffee trees have different maturity standards, but generally speaking, they can only be picked when they are fully mature or nearly fully mature.

For most varieties, the fruit is considered to be at its best when it is bright red or dark purple, when the interior of the fruit is fully developed and contains the highest levels of sweet and aromatic compounds.

However, not all fruits turn red or purple at the same time. There may be fruits at different stages of maturity on the same tree. Therefore, pickers need to carefully observe the color and shape of each fruit and only pick the most mature fruits.

Timing: morning, noon, evening

The timing of picking coffee beans is also one of the important factors affecting the quality of coffee. Depending on the region and type, the best time to pick coffee beans may vary.

Early picking can produce coffee with higher acidity and a crisp taste. These beans are usually brighter green or yellow and have a rich, bright aroma. However, due to not being fully ripe, these beans tend to lack sweetness and complexity.

Mid-season picking produces well-balanced and rounded coffee. The beans have already begun to turn red or purple and contain a moderate amount of sweetness and aroma compounds. These beans can produce more complexity during roasting and maintain a certain degree of acidity.

Late picking produces a sweet, full-flavored coffee. These beans are deep red or purple and have the highest levels of sweetness and aroma compounds. These beans develop more sweetness and complexity during roasting, but may lose some acidity.

Summarize

Picking coffee beans is one of the key steps to ensure the quality of coffee. Correctly selecting the most mature and brightest coffee beans and picking them at the right time can produce coffee with better taste and richer aroma. Therefore, it is very important for people engaged in coffee production and consumption to understand the shape and timing of coffee bean picking.
