Each ripe coffee fruit contains two seeds (the so-called "coffee beans"), which are composed of an outer skin, a sticky pulp and a hard shell. During processing, these outer layers are removed and only the seeds wrapped inside the hard shell are retained.

2. Principle Analysis

When we bring ground coffee powder into contact with water, water molecules penetrate into the tiny pores and cracks formed after each grind. These pores and cracks allow water molecules to interact with the inherent coffee substances in them, thereby releasing the aroma and taste of coffee.

However, the coffee beans themselves do not actually "open". Due to the hard shell, water molecules cannot penetrate into the seed. Instead, water molecules can only come into contact with the surface of the seed and enter through the pores and cracks. Therefore, during the brewing process, what we call "opening" is actually the water molecules interacting with the surface of the coffee beans and releasing the inherent aroma and flavor.

To achieve better brewing results, here are some common brewing tips:

a. Grinding degree: Choose the appropriate coarseness and fineness of the ground coffee powder according to different brewing equipment. Finer grinding can increase the contact area with water, but it is also easy to cause over-extraction; coarser grinding may lead to insufficient extraction.

b. Water temperature: Use water temperature around 92-96°C (198-205°F) for brewing. Too low or too high water temperature will affect the extraction effect of coffee.

c. Brewing time: Adjust the brewing time according to your personal taste. Generally speaking, a longer brewing time will make the coffee stronger, but it may also bring a bitter taste.
