1. Coffee Bean Selection

Before you start roasting, you first need to select high-quality coffee beans. High-quality coffee beans usually have a higher moisture content and uniform size. These characteristics ensure that the rich and diverse flavors are fully developed during the roasting process.

2. Green coffee bean processing

After traditional dry or wet processing, we get "raw" or "green" coffee beans that have not been processed or have been processed very little (such as peeling). These original state is green-yellow in color, relatively hard, and has a moisture content of about 10-12%.

3. Basic principles of baking

Roasting is the process of heating coffee beans to high temperatures to cause chemical changes inside them. These changes include the evaporation of water, the decomposition of sugars and acids, and the formation of aroma substances. Different degrees of roasting will produce different flavor characteristics.

4. Roasting and flavor

Coffee beans can be divided into three levels according to their roasting degree: light, medium and dark. Light roasting usually has a more distinct sour taste and floral and fruity aroma, medium roasting is more balanced, and dark roasting brings a rich and bitter taste.

When roasting coffee beans, it is very important to control the time and temperature. Generally speaking, a longer process at a higher temperature will produce a darker, more bitter and less oily taste (such as Italian or French); while a faster process at a lower temperature will retain more original flavor (such as American or Japanese).

6. Cooling and storage

After roasting, the coffee beans need to be cooled to stop the internal chemical reaction. Usually, cold air or water is used to quickly reduce the temperature. After that, the coffee beans need to be left to rest for a while to allow the carbon dioxide to release and make its taste more balanced.

7. Grinding and Brewing

The last step is to grind the roasted coffee beans and use them for brewing. According to personal taste preference, you can choose different coarse and fine grinding degrees to adjust the extraction time and concentration.
