Coffee bean cookies are a delicious snack that combines the rich aroma of coffee with the crunchy taste of cookies. It is the first choice for many people to enjoy during afternoon tea time or leisure time. If you like baking and trying new recipes, making your own coffee bean cookies will be an exciting and fun challenge.

Material preparation

To make these delicious, crispy coffee bean cookies, you’ll need the following:

  • 125g unsalted butter
  • 100g caster sugar
  • 1 large egg (beaten)
  • 1 teaspoon pure vanilla extract
  • 200g all-purpose flour
  • 1/2 teaspoon baking soda (for leaving dough)
  • Grade A Arabica or Robusta coffee beans (depending on your taste)

Step 1: Prepare the dough

First, beat the butter and icing sugar in a large bowl with an electric mixer or hand mixer until combined and light. Next, add the beaten eggs and pure vanilla extract and continue beating until just combined.

In another bowl, mix the flour and baking soda together. Then gradually add the flour mixture to the butter, sugar and egg mixture and gently stir with a spatula or your fingers until it becomes a clumping mixture. Make sure not to over-mix.

Step 2: Add coffee beans

Now it’s time to add your favorite coffee beans! You can choose to use Grade A Arabica or Robusta beans. Choose beans with different levels of richness and taste based on your personal taste.

Take out an appropriate amount of coffee beans (about 50 grams), put them in a food bag and tap them gently with a hammer to break the coffee beans into small particles. Then add the crushed coffee beans to the dough and stir evenly with a spatula or your fingers.

Step 3: Make the cookie shape

Place the dough on a clean work surface and knead it several times with your hands to make it smooth. Then divide the dough into several small pieces and flatten each piece with your palm to make it into a round cookie about 0.5 cm in size.

Preheat oven to 180°C (350°F). Arrange cookies on a baking sheet lined with non-stick paper, making sure there is enough space between them to prevent them from sticking.
