Bitterness is common in coffee and is a pleasant taste. Both light roasting and dark roasting bring bitterness, but the bitterness of dark roasting is stronger. This is because during the deep roasting process, the natural sugar in the coffee beans will be completely decomposed, and more bitter substances will be produced.

3. Aroma

Coffee aroma can be said to be one of the most important components of coffee quality. Both light roasting and dark roasting can bring different types of aroma, but there are obvious differences between them. Light roasting usually has a brighter, fresher, more fragrant and more acidic aroma; while dark roasting will cause chemical changes inside the coffee beans, producing a more complex, heavy and special aroma with a certain amount of dry fruit or chocolate.

Taste is crucial to judging whether a coffee is good to drink. There are also differences in taste between light roast and dark roast. Light roast is usually light, delicate, smooth and smooth, with relatively high acidity and sweetness; while dark roast is richer and fuller, with more obvious bitterness and astringency.
