The journey of coffee cherries: from cherries to aromatic coffee beans

Coffee is one of the most popular drinks in the world, but its production process is a complex and delicate process. From coffee fruit to fragrant coffee beans, it goes through many stages and changes. Let us explore this fascinating journey together.

1. Coffee tree growth and flowering

A mature coffee tree usually blooms twice a year. When the temperature and humidity are right, small white and fragrant white flowers will appear on the tree at the same time. These small white flowers usually only last for a few days, during which time they need to attract insects such as bees for pollination.

2. Fruit formation and ripening

When successfully pollinated, the small white flowers gradually transform into green, red or yellow fruits. These fruits are called "cherries" because of their bright, round and lovely appearance. Over time, the cherries will gradually mature and become more colorful.

3. Cherry picking and processing

When the cherries are fully ripe, farmers will pick them. This is usually a time-consuming and skillful process, as only fully ripe cherries can produce high-quality coffee beans. Once the picking is completed, the cherries are sent to the processing plant for further processing.

4. Peeling and fermentation

In the processing plant, the cherries are first deskinned. This can be done by machine or by hand. Next, the coffee beans are placed in large tanks for fermentation. The fermentation process usually lasts 24 to 48 hours and is very important in the development of the final taste and aroma.

5. Wash and dry

After fermentation, the coffee beans need to be washed to remove residue and mucilage. This step can be done by rinsing with water or soaking in water. Then, they are dried in the sun for several days to reduce humidity and make them easier to store and transport.

6. Roasting and grinding

After drying, the coffee beans need to be roasted, which is a very critical step. During the roasting process, the coffee beans will undergo chemical changes, releasing aroma and flavor. Different degrees of roasting will produce coffee beans with different tastes and flavors. Once roasted, the coffee beans can be ground into powder or granular form.

7. Brew and Enjoy

The last step is to add the freshly ground coffee to the boiling water and add the appropriate amount of milk, milk foam or other seasonings according to personal taste. Then you can enjoy the rich and intoxicating coffee.

From fruit to fragrant coffee beans, the whole process is full of hard work and skills. Every link has an important impact on the final quality. Therefore, when enjoying every drop in the delicious cup, please remember that there are countless farmers, processors and roasters working hard behind it.
