A Guide to Roasting Coffee Beans

Roasting is the process of heating raw coffee beans to evaporate their internal moisture, change their color, and release special aromas and flavors. The following is a detailed guide to roasting coffee beans to help you understand how to roast high-quality coffee beans.

1. Choose the right coffee beans

First of all, you need to choose high-quality coffee beans. Good coffee beans should be clean, complete, and free of defects such as cracks and insects. In addition, the varieties of coffee produced in different regions will also affect the taste and flavor, so you can choose according to your personal preferences.

2. Prepare tools and equipment

Before you start baking, you will need to prepare the following tools and equipment:

  • Stove or professional small electric or gas powered machine for home use:
  • Thermometer:
  • Timer:
  • Cleaning the container:
  • Baking cage:
  • Flame controller (optional):

3. Determine the degree and time of roasting

The degree of roasting refers to the color and taste of coffee beans, which can be determined according to personal preference. It is generally divided into three degrees: light roasting, medium roasting and dark roasting. Light roasting usually has a prominent sour taste and a fresh flavor; medium roasting is more balanced while retaining some sourness; dark roasting will make the coffee beans have a bitter flavor.

In addition, the weight of each batch of coffee beans needs to be determined and adjusted according to different degrees. Generally speaking, about 250 grams to 500 grams of coffee beans are processed each time.

4. Start pre-processing

Before we start, we need to pre-process the coffee beans. First, wash and dry them, and place them in a clean and dust-free environment for 24 hours to remove moisture and reach the appropriate moisture content.

5. Add to coffee machine or pot and start heating

The coffee beans are placed in a roasting cage and then added to the furnace or a professional small electric or gas-driven machine for home use. Depending on the equipment, the appropriate temperature and time can be selected.

6. Monitor temperature and time

Temperature and time need to be constantly monitored throughout the roasting process. Use a thermometer to ensure that the coffee beans are heated evenly and to avoid over or under heating.

7. Precise control of the first burst

When the beans begin to change color and make their first popping sound, they have reached the ideal internal moisture content. You can stop roasting at this point based on your personal preference.

8. Control the temperature for secondary explosion

If you want a deeper, fuller flavor, you can continue with the second crackle. Pay special attention to the heat at this stage to avoid overcooking or creating a bitter taste.

9. Finish and cool down

When the ideal temperature is reached, the coffee beans are removed from the roasting cage and placed in a clean container to cool down. At this time, the coffee beans will continue to release aroma and flavor.

10. Storage and use

Finally, store your roasted coffee beans in a dry, airtight container away from direct sunlight. This will preserve their freshness and flavor. Make sure the beans are completely cooled before brewing.

By following these steps, you can produce high-quality roasted coffee beans with a rich taste and strong aroma. With continuous practice and adjustment of each step, you will be able to master more techniques and create your own unique flavor according to your preferences.
