These substances include caffeine, acidic components and aroma substances. If we brew directly with cold water, it is difficult to fully extract these substances because the temperature is not high enough.

3. Coffee beans need to expand

When the hot water comes into contact with the coffee powder, the gas in it begins to be released and makes the particles expand. This process is called "fluffing".
