What does good coffee smell like? Coffee aroma includes dry aroma and wet aroma. The main components of dry aroma are esters and aldehydes. These compounds are particularly volatile, and the aroma types include floral, grassy and fruity. There are two types of wet aroma: one includes nutty aroma, caramel aroma and chocolate aroma, which exists in medium-light roasted coffee beans and can be felt in freshly brewed coffee and when the coffee smell is just inhaled into the nasal cavity; the other is the least volatile, and is the aftertaste left in the mouth after drinking coffee, including pine resin aroma, spicy aroma and charcoal aroma.
