The origin of coffee beans

Coffee beans are a seed that comes from the fruit of the coffee tree. These trees grow in tropical climates, mainly in regions such as Asia, Africa, and Latin America. The origin of coffee beans dates back hundreds of years, and legend has it that a shepherd discovered their magical effects.

Coffee bean picking and processing

When the berries on the coffee trees are ripe, farmers pick them. This process requires patience and skill, because only the berries that are moderately ripe can produce high-quality coffee beans.

After picking, farmers peel the fruit and remove the center - what we call "husking". They then wash, ferment and dry the raw fruit.

Baking: releasing aroma and flavor

After being processed to obtain a clean and intact raw germ (called "reliable"), it will be transported to the roasting plant. Here, the coffee beans will undergo an important process-roasting.

Roasting is a process that changes the internal chemical composition of coffee beans by high temperature heating. It not only makes the coffee beans fragrant, but also gives them a unique mellow taste.

Different degrees of roasting

According to different needs and taste preferences, people can choose different degrees of roasting to make coffee. Generally speaking, light or medium-deep roasting will retain more original flavor and acidity, and usually has a more obvious fruity and sour taste.

Whereas Deep or Extremely Deep (also called French) are both deep, or burnt, they can make the taste richer and more bitter, with a flavor that's somewhat similar to Coca-Cola and chocolate and dessert.

Roasting coffee beans is both an art and a science. During the roasting process, factors such as temperature, time and air flow all have an impact on the final coffee quality.

After long-term practice and continuous experimentation, professional roasters have mastered how to adjust these parameters according to the different types and origins of coffee beans. They create a variety of coffees with rich taste and aroma by precisely controlling each step.
