Sun drying usually brings some natural sweetness and rich taste to coffee beans. Due to the long exposure to the sun, the moisture inside the beans slowly blends into the outer skin, producing more complex and deep flavors during the fermentation process.

Wet method

Compared to the sun drying method, the wet processing is more complicated and requires more equipment. First, the picked coffee berries are placed in a water tank, and the buoyancy of the water will filter out the bad or unripe berries. Then the remaining berries are fermented, and this process can last one to two days.

Wet processing usually gives coffee beans a clearer and brighter taste. Because the inside of the bean has more communication and contact with the outside during the fermentation process, the flavor is richer and more complex.

Honey Processing

Honey processing is a method between the natural method and the wet method. In this method, the picked coffee cherries are stripped of their outer skin, leaving some pulp (called "honey"). The beans with the honey are then dried.

Honey processing can bring a unique and sweet flavor to coffee beans. Because some pulp is retained, additional fermentation occurs during the drying process, making the flavor richer and smoother.

Other innovative approaches

In addition to traditional sun-drying, wet-processing and pulsation processing, some innovative processing methods have emerged. For example, controlled atmosphere fermentation uses a special gas environment to control the fermentation process of coffee beans to achieve a more precise and unique flavor.

There is also a process called cryo-processing, in which the picked coffee cherries are quickly frozen and dried at low temperatures. This process can produce a fresh and bright taste.
